Vinification: After maceration of 12-24 hours, fermentation of 40 days follows in stainless tanks. Then the wine is bottled.

Cryomaceration
A winemaking technique in which the crushed grapes are kept at zero temperatures to weaken the cell structures in the grape skins. This is done before fermentation to allow for a more critical extraction of the compounds, leading to increased stability and flavor development. A low temperature also eliminates microbiological activity that is undesirable in wine.

Pairing

Grilled tuna, lamb or with a risotto with meat.
